Brandy Apricot Slice Recipe




These are not the usual brownies. These, *dramatic pause* are the tastiest Brandy Apricot Slices (I think it belongs to the Brownies Family) I've ever made. Imagine me squealing in delight as I was arranging the perfectly cut squares on the plate and garnishing the top of the squares with diced apricots. The end product (pictured above) looked exactly like the pictures in the recipe book, for the very first time!

Here's the recipe from the complete series, Fingerfood

Ingredients
1/2 cup dried apricots, chopped 
2 tablespoons brandy
100g dark chocolate
4 tablespoons butter
3 tablespoons milk
1 egg
1/4 caster sugar
3/4 cup plain flour, sifted
1/4 teaspoon baking powder

Chocolate Frosting
60g dark chocolate
1 tablespoon milk
1 1/2 cups icing sugar, sifted
1 tablespoon butter

Method:
  1. Combine apricots and brandy, set aside for 15mins. Melt chocolate and butter together, stir in milk, egg, sugar, flour and baking powder. Mix well. Stir the apricots through the chocolate mixture. 
  2. Spoon mixture into a lightly greased 8in/20cm square sandwich pan. Bake at 180 deg cel for 15-20 mins. Cool in the tin. Ice with chocolate frosting. 
  3. To make chocolate frosting, melt together dark chocolate and milk, blend in icing sugar and butter. Mix well. Garnish with diced apricots.
